Midday Simple Salad Solution

A lot of people are exploring vegetarian and vegan meals these days. Many want to incorporate more vegetable based meals into their eating regimen for increased personal health and wellness. Currently, there’s such a wealth of super-complicated gourmet vegan and vegetarian recipes out there (especially these days), people forget that just a healthy salad can do the trick.

Here’s a good one:


AKIL’S SPINACH & CORKY'S WALNUTS (DAY) SALAD

Ingredients Needed:
• Baby Spinach Leaves
• Red Onion
• Red & Yellow Bell Peppers
• Chopped or Whole Raw Walnuts (Preferably Corky’s Walnuts)
• Fresh Lemon Juice
• Fresh Crushed Garlic
• Black Pepper
• Ginger Powder
• Sea Salt
• Trader Joe’s 21-Seasoning (or Mrs. Dash)
• Soy Sauce (or Bragg Liquid Amino)
• Agave
• Extra Virgin Olive Oil


Preparation:

1. Empty baby spinach leaves onto a chopping block. Chop all of the spinach into small pieces.


2. Put chopped spinach into bowl then add a tip of a teaspoon of freshly crushed garlic into a bowl and stir thoroughly. Let sit.


3. Dice bell peppers, set aside.


4. Thinly slice slivers of red onion, set aside.


5. Chop Corky's Walnuts into bite-sized pieces. (Try not to devour them before salad's done.)


6. HOME-MADE SALAD DRESSING: n a coffee cup, crush more fresh garlic, add about a tablespoon of olive oil, about a teaspoon of soy sauce or liquid amino, about half a squeezed lemon, about a teaspoon and half of Agave, sea-salt, ginger powder, black pepper, Trader Joe’s 21-Seasonings and beat the liquid mixture thoroughly with a fork.


7. Toss all of your chopped vegetables and nuts into the bowl with your garlic marinated spinach. Toss salad thoroughly with your home-made salad dressing. Coat every bite.

This salad explodes with garlic-infused flavor under its light Asian inspired dressing. This un-complicated healthy meal, filled with nutrients and nut protein, always does the trick.

Yawn. Sometimes we just don’t need a salad transformed into a meat-looking patty. Sometimes, we just want a damned good salad. Enjoy.
